Tuna Marinade
Local tuna, sashimi grade, diced120 g
Lime juice10 ml
Red chili, fine dice3 g
Sesame oil3 ml
Fillings
Cucumber, julienne40 g
Red onion, fine slice20 g
Iceberg lettuce, shredded30 g
Sriracha mayo25 g

Steak-cut fries150 g
Method

Dice tuna 5mm. Marinate with lime, chili, sesame oil 5 min only — longer "cooks" the fish.

Warm tortilla on flat-top 20 sec each side.

Spread sriracha mayo down centre. Layer lettuce, cucumber, onion, tuna.

Fold ends in, roll tight. Cut on the bias.

Plate cut-side up — pink tuna visible. Fries alongside.
