Method

Brush zucchini with olive oil, char on flat-top 2 min each side. Roast capsicum strips ahead, peel and slice.

Warm tortilla on flat-top 20 sec each side — soft, pliable.

Spread hummus across centre line of warm tortilla. Layer spinach, zucchini, capsicum.

Drizzle garlic aioli over fillings.

Fold ends in, roll tight from bottom. Cut on the bias.

Plate cut-side up. Fries piled to one side, hot from fryer.
Plating Notes
Cut bias face toward guest, cross-section visible. Fries clustered tight, not scattered. No garnish on plate edge.
